Recently brewed with a second generation of this yeast and bottled the entire batch in Belgian bottles. Even though it's only a month old this batch already has a great blend of Brett and classic Saison character. Looking forward to seeing how this develops in the bottle. 100% pilsner malt grist with a single hop addition at 60 minutes for approximately 35 IBUs. Mash started at 40C and was slowly stepped up to 67C over 90 minutes.
